Ingredients

Adjust Servings:
1/2 cup plain yoghurt
1/2 Cucumber
1/4 teaspoon ground cumin
1/2 tablespoon finely chopped corriande leaves Fresh is best
3/4 cup Rice Long grain rice is preferable
1 1/2 cups water
8 pieces Chicken Drumsticks
1/4 cup Tandoori paste Use your favorite
2 Tablespoons Olive Oil
1 thickly sliced onion
5 finely chopped Cloves garlic
1 can Diced tomatoes I use Italian diced tomatoes
1 cup water
100 g Baby spinach

Delicious Tandoori Chicken and Rice.

Slit drumsticks a couple of times. Combine in a large bowl with tandoori paste, rubbing all over the chicken. Cover and refrigerate for 30 mins.

Place the yoghurt into a small bowl. Remove the end from the cucumber. Finely grate into the yoghurt. Add the cumin and coriander and mix well. Season to taste with salt and pepper. Cover and refrigerate while chicken is cooking.

Combine 1 1/2 tablespoons oil with the chicken. Heat a large deep heavy-based frypan or large shallow saucepan over medium-high heat. Add the chicken and brown on all sides, about 3 mins.

Add the remaining oil and onion and cook for 2 mins, until softened. Stir in the garlic and cook for 2 mins. Add tomatoes and 1 1/2water, cover and bring to the boil. Reduce heat to low, and cook for 15 mins. Remove lid, season and simmer gently for about 10 mins until sauce thickens slightly and chicken is tender. Stir in spinach and cook for 1-2 mins, or until just wilted.

While the chicken is cooking, combine the rice, 1 cup water and a pinch of salt in a medium sized heavy-based saucepan. Bring to the boil and simmer, covered, over low heat for 15-20 mins, or until the water is absorbed and the rice is cooked.

Serve with the chicken and some mass(flavour as you wish)
