185 g pistachios
2 cans Creamy evaporated milk
1 can Condensed Milk
300 ml Thickend cream
8 pods Cardamom
1/2 teaspoon Ground cinnamon
2 zest only(grated) Limes

Pistachio, cinnamon and lime kulfi

    Reserve 1/4 cup of pistachios. Place remaining pistachios in a high-powered food processor or blender and process until a fine powder forms.

    Place evaporated milk, sweetened condensed milk, cream, cardamom pods, cinnamon and ground pistachios in a saucepan and place over low heat. Whisk to combine and continue whisking until mixture reaches simmering point, remove from heat. Stir in lime zest and allow flavours to infuse for 20 minutes.

    Pick out cardamom pods. Roughly chop remaining pistachios.

    Using 1/2 cup capacity silicon moulds, lightly spray with canola or vegetable oil, place moulds onto a baking tray that can fit into your freezer, divide kulfi mixture between silicon moulds.

    Place in freezer for 5 hours or for best results overnight until set. If you would like to serve your kulfi as an ice cream on a stick, halfway through the freezing process when the kulfi is semi firm, stick in wooden paddle pop sticks into the centre of each mould.

    When you’re ready to serve your kulfi, briefly dip base of silicon mould into hot water then flip kulfi onto serving plate. Top with chopped pistachios to serve.
